Pumpkin Vanilla Mousse


8 oz. Cream Cheese
3/4 cup Powdered Sugar
1 tsp. Vanilla Flavoring
3/4 cup Pumpkin - Canned
1 tsp. Pumpkin Pie Spice
1 ¼ cup Cool Whip


  1. Mix all ingredients together with the exception of the Cool Whip.
  2. Fold Cool Whip using rubber spatula until well incorporated.
  3. Garnish with fresh mint if desired.

*Makes approximately 3 cups.
